You have made the right choice, I used to have a Mits L300 4wd van a long while back because I couldn't afford a syncro - they were still fetching $30-$40K when I was looking first time. Before that I had a 2wd 73 kombi tin top and my dad had already bought a syncro.
I wanted a syncro really bad as the Mitso was a piece of crap.
Anyway, it seems like a natural progression of yours (as was mine) into a VW kombi syncro.
The ex-telstra van I saw on car point looked like areal mess that had never been looked after - which is a real concern for a high mileage vehicle. If they are serviced they run well for many kms.
Dont rush in and try out at least 2 vans before buying. Also look at what van suits your needs.

I would at least go and have a look/ test drive the Sydney one - seeing you are in Sydney - maybe not to buy but at least get a benchmark of the $$ for what you get. Both have gas conversions so see where they have installed the tank and how much space this takes up.
Many Telstra workers did not treat their vans very well - so look closely for damage to panels.
I wouldnt expect miracles from the A/C in these things either - the Prestige system is not very reliable from what I have seen and the mounting brackets can cause a lot of damage to the engine case.
