If this is a thermostat problem, it is not related to the operating temperature of the thermostat. The MV engine is designed to run at 87 and the ECU responds accordingly.
I suggest that you get a new genuine thermostat (Behr is an OEM manufacturer) so that you know where you are starting from. The only cooling problem that I have experienced was with a non-genuine thermostat. It had a slow and erratic response; when a genuine thermostat was fitted, response returned to rapid and stable.
If you still have a problem, then it is time to look at the rest of the system, the first step being to ensure that there is full flow throughout.

I should have added that this includes ensuring that that the system is fully bled; this might include the bleed at the top of the radiator and the bleed at the top of the thermostat housing.

Hi Andy
It sounds like pressurising of your cooling system by cylinder compression gases due to a faulty head gasket. Check it out at a radiator shop for hydro carbons in your coolant – this is a sure tell tale test.
If this is so, a top overhaul is facing you.
